This
tasty recipe will make you yearn for a trip to the beautiful
island of Jamaica. Hey Mon!
Mashed
plantains bind and mositen these island-inspired burgers.
Choose ripe plantains with black skins (tender and slightly
sweet). Accompany with Ginger Honey Mustard or Commercial
Pickapeppa, a tangy, sweet Jamaican condiment found near the
steak sauces at your local grocery store.

cup thinly sliced soft black plantain (medium)
1/ 4
cup chopped green onions
1 tablespoon cider vinegar
1 tablespoon worcestershire sauce
1 teaspoon
dried thyme
1/2 teaspoon ground allspice
1/2 teaspoon salt
1/4 teaspoon ground red pepper
1 1/2 lbs ground chicken breast
6 2-oz onion sandwich buns, split
6 red onion slices (1/8" thick)
12 tomato slices (1/4" thick)
Cooking spray
Prepare
the grill.
Cook
plantain in boiling water for 15 minutes or until tender.
Drain and place in a large bowl. Mash plantain with a fork
until smooth and let cool for 5 minutes. Add green onions
and the remaining ingredients including the ground chicken
breast. Divide mixture into 6 equal 1/2" thick patties.
Place
patties on grill coated with cooking spray. Grill for 4 minutes
on each side. Remove from grill and let stand for 5 minutes.
Place
buns on grill (cut sides down) for 1 minute or until toasted.
Place patties on buns, top with your condiment of choice,
1 onion slice and 2 tomato slices.

cup dijon mustard
1/4 cup honey
1 1/2 tablespoons dry mustard
1 1/2 tablespoons minced peeled fresh ginger
1/8 teaspoon hot pepper sauce
