simple to make recipe, rich in Vitamin K and flavor... Enjoy!

tablespoon balsamic vinegar
2 tablespoons extra-virgin olive oil
2 bunches kale, washed and trimmed, stems removed
6 amaretti cookies, crushed
1 ripe medium Anjou pear, washed and thinly sliced
1/4 cup grated pecorino Romano
Kosher salt and cracked black pepper

Place the balsamic vinegar and olive oil in a large stainless-steel
bowl.

Add the kale, sliced pears and amaretti.
3.
Add the pecorino Romano and toss thoroughly so the vinaigrette
coats the kale well. Season to taste with salt and pepper
and serve.
