Mango Black Bean Rum Salsa

A GJ Favorite: ***** This is my favorite Super bowl dip. Spice it up and enjoy!


INGREDIENTS

16 oz fresh mango slices, chopped. You may substitute with Del Monte Sun Fresh Mango
1 cup chopped red onion
2 Serrano peppers, chopped
1 cup diced cucumbers
1 cup of fresh cilantro
1 12 oz jar marinated roasted peppers

1 tbsp ground ginger
2-3 dashes of cayenne red pepper powder
1 tbsp orange zest
1/2 lime, fresh squeezed
1 tbsp spiced rum

1 15 oz can of black beans, drained

Combine 12 oz mango, peppers, cucumber, cilantro and roasted peppers in food processor and blend to desired consistency.

Add ginger, cayenne powder, orange zest, lime juice and rum

Transfer to mixing bowl.

Stir in black beans (use at least 7 1/2 oz) and the add'l 4 oz of chopped mangos.
