Mix
up your favorite margarita to compliment this quick and easy
recipe. I added some garlic and red chili powder to Chef Sanders
recipe to spice things up a bit... Enjoy!
3 large ripe tomatoes, approx 1 1/2 lbs, cored and chopped
1/2 cup diced onion
2-3 cloves of garlic, chopped
1 finely chopped fresh jalapeno pepper
2 tbsp finely chopped fresh cilantro
1 tbsp fresh lemon juice
1-2 dashes red chili powder
1 tbsp kosher salt
1. Combine all ingredients
in a medium mixing bowl. Cover and allow to marinate, at room
temperature, for 30 minutes.
2. Taste and adjust
seasoning as desired.
3. Serve with tortilla
chips, on quesadillas or pour over eggs and bake for heuvos
rancheros.
