This
hearthy dish is a GJ favorite. Serve with garlic bread.
1 cup of frozen smoked chicken tortellini
1
shredded organic carrot
1-2 cloves of garlic (chopped)
1/2
organic cucumber (chopped)
3-4 tablespoons of ground pistachios
1/2 -1 teaspoon of sage
fresh ground black pepper (to taste)
3-4 tablespoons pecorino romano cheese
Cook
pasta according to directions. Check for desired tenderness.
While
pasta is cooking, saute shredded carrot, cucumber and sage
in butter (or EVOO) in a large sauce pan on medium heat until
tender. Add garlic and cook for an additional 1-2 minutes.
Combine
with drained pasta. Add pepper, pistachio and cheese. Toss
well and serve.
You
can add some cayenne or red pepper flakes for more heat if
desired.
