This
quick and healthy recipe adds a flavorful salty note to a
simple steamed vegetable.

cup finely chopped fresh parsley
3 tablespoons finely chopped shallots
1 tablespoon chopped fresh basil
1 tablespoon chopped capers
2 teaspoons grated lemon rind
1 teaspoon chopped fresh oregano
2 cloves of minced garlic
2 teaspoons EVOO
1 teaspoon fresh lemon juice
Season to taste with salt and pepper

cups zucchini (sliced - 1/4 inch thick; about 2 lbs)
Combine
first nine ingredients in a large bowl, season to taste and
set aside.
Steam
zucchini, covered for 5 minutes or until crisp-tender. Combine
with herb mixture in bowl, toss to coat and serve.
