This
very simple, tasty recipe can be made with your fish of choice

slices of fresh tuna
1 green bell pepper
4 tomatoes, firm and ripe
1 lemon for fresh juice
3 tablespoons
EVOO
Salt and pepper to taste
Rinse
the bell pepper. Cut in half, remove white parts and seeds
and dice.
Rinse
and dry tomatoes. Cut in half, remove seeds and juices, then
dice.
Rinse
and dry tuna slices. Brush baking dish with 1 tablespoon EVOO.
Place tuna in baking dish and season with salt and pepper.
Cover tuna with diced tomatoes and bell pepper.
Drizzle
with lemon juice and remaining EVOO. Bake in preheated oven
at 400°F for 20 minutes. Remove from oven and serve immediately.
