Here's
something healthy and easy to make. This is a modified version
of a recipe found on allrecipes.com. It is prepared in a slow
cooker for approximately 2 hours. Feel free to add more heat
or spices and even a little citrus.
Prep
time: 10 minutes
INGREDIENTS
1 (15
oz) can black beans
1 (15 oz) can kidney beans, rinsed and drained
1 (15 oz) can garbanzo beans, rinsed and drained
1 (16 oz) can vegetarian baked beans
1 (14.5 oz) can diced or pureed tomatoes
1 (15 oz) can whole kernel corn, drained
1 large onion, chopped
1 green bell pepper, chopped
2 stalks celery, chopped
2 cloves garlic, chopped
1 tbls chili powder
1 tbls dried oregano
1 tbls dried basil
1 tsp cumin seed
black pepper to taste
16 oz miso ginger broth (found at Trader Joe's)
In a
slow cooker, combine beans, onion, celery, garlic, corn and
spices. Add miso ginger broth and cook for at least 2 hours
on High.
Served
with jasmine rice
